Sunday, Monday, Frugal Days

If you haven't been following this--Meredith is trying out some '50's budget menus. This is the first post, but you'll have to see the followups as well.

Just for the record, I haven't been able to make "like the can" baked beans yet either.

I had nearly given up on dried beans after trying just about every trick I could find in my old home ec books (a pinch of baking soda, no a pinch of cream of tartar, water changes every hour on the hour, and so on) until I finally started using my rice cooker on the "soup" setting. I can't make tons of beans this way and they're still not as soft as canned but it does work well enough for me to have switched to dried for about 75% of my bean needs. I'm trying to become organized to prepare lots of beans at a go and freeze them - I understand that this further softens them - for a kind of middle ground between dried and canned but haven't quite managed that level of organization.
